I love focusing on recipes that can get you in and out the kitchen quickly. With an active 7 year old and a husband who works out, there is always someone hungry here. This recipe can be used as a filling appetizer or become the main entree with a side of fresh vegetables.

Chicken Nacho Bake
I love Nachos!
Who doesn’t, right? But the traditional chips and dip gets quite boring. Nacho fans will agree that once in while you need a twist on tradition. Any twist I add has a healthy side to it. Who can really call Nachos healthy, but the prep work can be. Using fresh ingredients and a nutritious cooking process, you can really have nachos without the guilt!

Snack Bowl XLIX!
Seahawks or Patriots
That is the question on everyones mind this weekend. I am not much of a football fan (I enjoy playing it, not so much watching it) but my family is crazy about it. Every year my husband and brother pick a team, just to bug them a little I go for the opposing team (everyone needs a cheerleader right?). This year the pick of the family is the Seattle Seahawks, so naturally I am going to cheer for the New England Patriots. Two of the things I look forward to on Super Bowl Sunday are 1) the commercials and 2) snacking with the family. This year instead of doing the same snacks I am going to change it up a bit. Let’s show our team pride by eating the team colors. Confused?
