Chicken Nacho Bake

Who doesn’t, right? But the traditional chips and dip gets quite boring. Nacho fans will agree that once in while you need a twist on tradition. Any twist I add has a healthy side to it. Who can really call Nachos healthy, but the prep work can be. Using fresh ingredients and a nutritious cooking process, you can really have nachos without the guilt!

Where are the chips you say? Thats the secret in this dish. I love Trader Joe’s for their variety in healthy chips and one of my favorites; Quinoa and Black Bean infused Tortilla Chips. I eat these with practically everything.

We are going to take these beautiful polygons (had to look up what 6 sides was) and ground them into a fine pie like crust. Yes, this will be our base. As much as I hate doing that to these chips, the aftermath is just awe inspiring and decadent. The combination of spiced ground chicken, fresh vegetables, thick salsa and LOTS of cheese on top of this crust…. wait for it………………Nacho heaven!!

Easy as pie! I like to add a pinch of Indian spice to my ground chicken while cooking it. The aroma of garlic and ginger with sautéed onions makes the chicken taste amazing on its own.

Toppings are my favorite part of any dish. Who can really imagine nachos without fresh Avocados. I love them, whole and turned into guacamole. I garnished with avocado slices, diced tomatoes and jalapeños.

Chicken Nacho Bake
A delicious, tortilla crusted ground chicken nachos topped with fresh avocados and tomatoes.

Ingredients

Instructions
  1. Preheat your oven to 400 degrees.
  2. Put the tortilla chips into the blender and turn blend into a fine crumb. Add some unsalted butter and blend for a few more seconds so the crumbs start binding. Press down into a baking dish and bake for 15 min, until the crust browns. Don't let it burn. Remove it and let it cool.
  3. Heat a skillet. Chop up your onion and bell pepper finely and in 2 tbsp of oil, sauté them until the onions are golden brown.
  4. Add the ginger garlic paste and the ground chicken and cook until chicken is not raw anymore. 7-9 min
  5. Add the rest of the spices: chili powder, salt, turmeric and mix well until well blended and you can smell the aroma. 1-2 min
  6. Add the jar of salsa and mix well. Then pour the mixture over your tortilla crumb crust evenly. If you have any crust left over sprinkle this on top of the ground chicken mixture. Then sprinkle with as much cheese as you would like.
  7. Bake at 375 for 25 minutes. Garnish with cilantro, green onion, jalapeños and avocado. Sour cream (optional)
